Arroz Con Dulce
Creamy spiced coconut rice pudding with tender grains, warm cinnamon, and a silky finish.
Ingredients
- 1 cups Medium Grain Rice
- 4 cups Water
- 1 pcs Cinnamon Stick
- 4 pcs Whole Cloves
- 6 pcs Fresh Ginger
- 1 cups Coconut Milk
- 8 tbsp Evaporated Milk
- 8 tbsp Sweetened Condensed Milk
- 5.28 tbsp Golden Raisins
- 0.375 tsp Kosher Salt
- 1 tsp Vanilla Extract
- 0.5 tsp Ground Cinnamon
Method
- Rinse {medium_grain_rice} under cold water until the water runs mostly clear, then soak it in {water} so the grains hydrate and cook creamy without breaking.
- In a medium saucepan over medium heat, combine fresh {water}, {cinnamon_stick}, {whole_cloves}, and {fresh_ginger}; bring to a gentle simmer, then steep until fragrant and lightly amber.
- Drain the soaked {medium_grain_rice}. Strain the spiced liquid into a heavy saucepan, add the drained {medium_grain_rice} and {kosher_salt}, and simmer over low heat until the grains are tender and most of the liquid is absorbed.
- Stir in {coconut_milk}, {evaporated_milk}, {sweetened_condensed_milk}, {golden_raisins}, and {vanilla_extract} over low heat. Cook gently, stirring often, until glossy, thick, and creamy; taste and adjust with a pinch more {kosher_salt} if needed.
- Let the {medium_grain_rice} pudding rest off the heat until slightly thickened, then spoon into bowls and finish with {ground_cinnamon} for a warm aromatic lift.
