Asparagus Goat Cheese Danishes

Ingredients

  • 320 g Puff Pastry
  • 8 pcs Asparagus
  • 120 g Goat Cheese
  • 1 pcs Lemon
  • 0.75 tsp Black Pepper
  • 1 tsp Kosher Salt
  • 1 pcs Egg
  • 1 tbsp Olive Oil
  • 1 tsp Honey
  • 2 tbsp Parsley

Method

  1. Trim {asparagus} and slice on a sharp bias for even cooking. Finely grate the zest from {lemon}. In a bowl, mash {goat_cheese} with {black_pepper}, a pinch of {kosher_salt}, and the {lemon} zest until spreadable.
  2. Set {puff_pastry} on a parchment-lined tray and cut into equal rectangles. Score a border around each piece without cutting through so the edges rise neatly in the oven.
  3. Spread the {goat_cheese} mixture inside the borders, then arrange {asparagus} over the top. Beat {egg} and brush the pastry edges for a deep golden finish. Drizzle the {asparagus} lightly with {olive_oil} and season with a little more {kosher_salt}.
  4. Bake in a hot oven until the {puff_pastry} is deeply golden, crisp and well puffed, and the {asparagus} is just tender with lightly blistered tips.
  5. Let the danishes cool briefly so the layers set, then finish with a light drizzle of {honey}, a little chopped {parsley}, and a final crack of {black_pepper}. Serve with wedges of the zested {lemon} for squeezing.
