Beef Suya
Smoky spiced beef skewers with fiery yaji and a bright onion finish.
Ingredients
- 4 tbsp Suya Spice
- 400 g Beef Sirloin
- 1 tsp Ground Ginger
- 1 tsp Garlic Powder
- 1 tbsp Vegetable Oil
- 1 pcs Onion
- 1 pcs Tomato
- 100 g Cabbage
- 1 pcs Lime
- 1 tsp Kosher Salt
Method
- Thinly slice {beef_sirloin} across the grain, then season all over with {kosher_salt}, {suya_spice}, {ground_ginger}, and {garlic_powder}. Drizzle with {vegetable_oil} and rub well so the spice clings evenly for better crust.
- Thread the seasoned {beef_sirloin} onto skewers in a single loose layer so the heat can circulate and the edges char instead of steam.
- Grill the skewered {beef_sirloin} over high heat on a grill pan or charcoal grill in a single layer, turning once, until deeply browned, lightly charred at the edges, and just cooked through. Dust with more {suya_spice} as soon as it comes off the heat so it blooms on the hot meat.
- Thinly slice {onion}, {tomato}, {cabbage}, and {lime} so they stay crisp and bright for serving alongside the hot {beef_sirloin}.
- Rest the grilled {beef_sirloin} briefly, then serve with {onion}, {tomato}, and {cabbage}. Finish with a squeeze of {lime} for brightness against the smoky spice.
