Method
- Peel {ripe_plantain} and slice on a sharp bias into thick pieces so they brown evenly and keep a soft centre.
- Pour {vegetable_oil} into a wide skillet over medium heat and warm until it shimmers; steady heat helps {ripe_plantain} caramelise before the sugars scorch.
- Lay in {ripe_plantain} in a single layer without crowding, fry over medium heat until deep golden and caramelised on both sides, then lift out, drain briefly, and season at once with {salt}.
- Transfer {ripe_plantain} to a warm plate and serve immediately while the edges stay lightly crisp and the centre remains soft.
