Fattoush
Crisp pita, bright herbs, and sharp sumac in a lively lemony salad.
Ingredients
- 2 pcs Pita Bread
- 3 tbsp Olive Oil
- 1 tsp Kosher Salt
- 1 pcs Romaine Lettuce
- 2 pcs Tomato
- 1 pcs Cucumber
- 4 pcs Radish
- 2 pcs Green Onion
- 8 tbsp Parsley
- 4 tbsp Mint
- 1 pcs Garlic
- 3 tbsp Lemon Juice
- 2.5 tsp Sumac
- 1 tbsp Pomegranate Molasses
Method
- Brush {pita_bread} with {olive_oil}, season lightly with {kosher_salt}, and toast in a large skillet over medium heat for several minutes per side until deeply golden and crisp. Transfer to a rack so the pieces stay crunchy.
- In a large bowl, combine {romaine_lettuce}, {tomato}, {cucumber}, {radish}, {green_onion}, {parsley}, and {mint}. Season the vegetables lightly with {kosher_salt} as you build the bowl so they taste lively all the way through.
- Whisk {garlic}, {lemon_juice}, {sumac}, {pomegranate_molasses}, and {olive_oil} in a small bowl until the dressing looks glossy and lightly thickened. Add a pinch of {kosher_salt} and taste for a sharp lemony balance.
- Break {pita_bread} into rough shards over the bowl, pour over the dressing, and toss with the vegetables until every leaf is lightly coated. Finish with an extra pinch of {sumac} and serve right away while the {pita_bread} stays crisp.
