Ful Medames
Creamy fava beans with cumin, lemon and a sizzling garlic finish.
Ingredients
- 300 g Fava Beans
- 4 pcs Garlic
- 1 pcs Lemon
- 4 tbsp Olive Oil
- 2 tsp Ground Cumin
- 1 tsp Ground Coriander
- 1.75 tsp Kosher Salt
- 0.5 tsp Black Pepper
- 15 g Parsley
- 2 pcs Pita Bread
Method
- Rinse {fava_beans}, cover with plenty of cold water in a bowl, and soak until fully hydrated and beginning to swell.
- Drain {fava_beans}, transfer to a saucepan, cover with fresh water, add a pinch of {kosher_salt}, and simmer over very low heat until completely soft and creamy, topping up with hot water as needed so the beans stay submerged.
- Mince {garlic}, chop {parsley}, and cut {lemon} so everything is ready before the finishing steps.
- Drain most of the cooking liquid from {fava_beans}, reserving a little in the pan, then mash over low heat with {ground_cumin}, {black_pepper}, more {kosher_salt}, a squeeze of {lemon}, and {olive_oil} until loose, creamy, and well seasoned.
- Heat {olive_oil} in a small skillet over medium heat, add {garlic}, {ground_coriander}, and a pinch of {kosher_salt}, then fry briefly until the garlic turns light golden and fragrant; pull it immediately so it does not burn and turn bitter.
- Spoon {fava_beans} into bowls, pour over the sizzling {garlic} finish, scatter with {parsley}, drizzle with {olive_oil}, and serve at once with the remaining {lemon} and warm {pita_bread} for brightness and contrast.
