Goat Pepper Soup

Ingredients

  • 2 tsp Pepper Soup Spice
  • 500 g Goat Meat
  • 1 pcs Onion
  • 2 pcs Scotch Bonnet
  • 1 pcs Seasoning Cube
  • 1.75 tsp Salt
  • 10 g Scent Leaf
  • 1 pcs Lime
  • 1.2 l Water

Method

  1. Pat {goat_meat} dry in a bowl so it sears and simmers cleanly, then toss with {salt}, some {onion}, and {seasoning_cube} until evenly coated.
  2. Place the seasoned {goat_meat} in a medium pot over medium heat, add {water}, the remaining {onion}, {pepper_soup_spice}, {scotch_bonnet}, and more {salt}, then bring to a gentle simmer. Cover and cook until the broth smells deeply aromatic and the {goat_meat} is tender but still springy.
  3. Taste the broth and adjust with {salt} if needed, then stir in {scent_leaf} off the heat until just wilted for a fresh top note. Serve at once with {lime} for squeezing over the hot soup.
