Green Seasoning
A bright, fiery herb blend that wakes up chicken, fish and vegetables with fresh island depth.
Ingredients
- 4 pcs Scallions
- 6 pcs Garlic
- 12 pcs Culantro
- 1 pcs Scotch Bonnet Pepper
- 1 pcs White Onion
- 2 pcs Celery
- 60 ml White Vinegar
- 45 ml Lime Juice
- 1.5 tsp Kosher Salt
- 30 ml Water
- 8 pcs Thyme
- 12 pcs Cilantro
Method
- Roughly chop {scallions}, {thyme}, {garlic}, {culantro}, {cilantro}, {scotch_bonnet_pepper}, {white_onion}, and {celery} so they blend smoothly and evenly.
- Add the chopped {scallions}, {thyme}, {garlic}, {culantro}, {cilantro}, {scotch_bonnet_pepper}, {white_onion}, and {celery} to a blender with {white_vinegar}, {lime_juice}, {kosher_salt}, and {water}. Blend until smooth but still flecked with herbs, scraping down once or twice for an even texture.
- Taste {green_seasoning_base} and adjust with more {kosher_salt} or {lime_juice} if needed for a bright, sharp finish. Spoon into a clean jar, cover, and refrigerate so the flavors meld before using on chicken, fish, or vegetables.
