Silky cured herring with sharp onion, pickles and a bright touch of parsley.

Haring Met Uitjes

Ingredients

  • 4 pcs Matjes Herring
  • 1 pcs White Onion
  • 80 g Pickles
  • 1 tbsp Parsley
  • 1 pcs Lemon
  • 0.25 tsp Black Pepper

Method

  1. Finely dice {white_onion}, slice {pickles}, and chop {parsley} so the garnish is neat and sharp against the soft {matjes_herring}.
  2. Arrange {matjes_herring} on chilled plates, spoon over the prepared {white_onion} and {pickles}, then season lightly with {black_pepper}.
  3. Squeeze {lemon} over the {matjes_herring}, scatter with {parsley}, and serve at once while the fish is cool and silky.
