Horiatiki
Crisp vegetables and briny feta dressed with sharp lemon and rich olive oil.
Ingredients
- 2 pcs Tomato
- 1 pcs Cucumber
- 1 pcs Red Onion
- 1 pcs Green Bell Pepper
- 80 g Kalamata Olives
- 120 g Feta Cheese
- 3 tbsp Extra Virgin Olive Oil
- 1 pcs Lemon
- 1 tsp Dried Oregano
- 0.75 tsp Kosher Salt
- 0.25 tsp Black Pepper
Method
- Cut {tomato} into chunky wedges, slice {cucumber}, thinly slice {red_onion} and {green_bell_pepper}, then place them in a large bowl. Sprinkle with {kosher_salt} so the vegetables season early and release a little juice for the dressing.
- Whisk {extra_virgin_olive_oil}, {lemon}, {dried_oregano}, {black_pepper}, and a pinch more {kosher_salt} until lightly emulsified into a bright ladolemono.
- Add {kalamata_olives} and {feta_cheese} over the vegetables, pour on the dressing, and toss very gently so the {feta_cheese} stays in large pieces. Let it sit briefly until glossy and lightly juicy, then finish with a final sprinkle of {dried_oregano}.
