Kofta Meshweya

Ingredients

  • 400 g Ground Beef
  • 1 pcs Onion
  • 12 g Parsley
  • 2 pcs Garlic
  • 2 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Baharat
  • 0.5 tsp Black Pepper
  • 1.25 tsp Kosher Salt
  • 1 tbsp Olive Oil
  • 1 pcs Lemon

Method

  1. In a bowl, combine {ground_beef}, {onion}, {parsley}, {garlic}, {ground_cumin}, {ground_coriander}, {baharat}, {black_pepper}, and {kosher_salt}. Mix firmly until tacky and cohesive so the {ground_beef} binds well, then shape into long kofta around skewers or into oval logs.
  2. Refrigerate the shaped {ground_beef} briefly so the mixture firms and holds its shape on the grill.
  3. Heat a grill pan or heavy skillet over medium-high heat and brush with {olive_oil}. Grill the {ground_beef} without crowding, turning every few minutes, until deeply browned with light charring, the centers are just cooked through, and an instant-read thermometer reads 160°F.
  4. Transfer the {ground_beef} to a plate, rest briefly so the juices settle, then squeeze over {lemon} for brightness before serving.
