Kransekake
Chewy almond rings with a crisp shell and a snowy glaze fit for celebrations.
Ingredients
- 180 g Almond Flour
- 200 g Powdered Sugar
- 2 pcs Egg White
- 0.5 tsp Almond Extract
- 5 g Butter
- 1 tsp Lemon Juice
Method
- Combine {almond_flour}, most of the {powdered_sugar}, {egg_white}, and {almond_extract} in a bowl, then work into a firm, smooth dough until it holds its shape without sticking heavily.
- Wrap the dough and chill it until firm and easier to roll, which helps the rings keep clean edges in the oven.
- Heat the oven to medium heat and lightly grease a baking sheet with {butter}. Roll the chilled dough into even ropes, form small rings, and press the ends together smoothly so they bake evenly.
- Bake the rings on the middle rack until lightly golden at the edges and dry on the surface, then cool on the tray briefly before moving carefully so they do not crack.
- Whisk the remaining {powdered_sugar} with {lemon_juice} into a thick glaze, then drizzle over the cooled rings and let it set to a snowy finish.
