Kutia
Tender wheat with honey, poppy seed and walnuts, finished with a fragrant sparkle of dried fruit.
Ingredients
- 180 g Wheat Berries
- 35 g Poppy Seeds
- 35 g Walnuts
- 40 g Dried Apricots
- 30 g Raisins
- 40 g Honey
- 1.2 l Water
- 0.625 tsp Salt
Method
- Rinse {wheat_berries}, cover with {water}, add a pinch of {salt}, and soak until the grains look plump and evenly hydrated.
- Drain the soaked {wheat_berries}, transfer to a saucepan, cover with fresh {water}, add another pinch of {salt}, and simmer on low heat until tender but still pleasantly chewy.
- Toast {poppy_seeds} briefly in a dry skillet over low heat until fragrant, then crush them to a damp paste so they release their full aroma.
- Roughly chop {dried_apricots} and {walnuts}, then rinse {raisins} so the mix-ins stay tender and glossy in the finished {kutia}.
- Drain any excess liquid from the cooked {wheat_berries} while still warm, then fold in {poppy_seeds}, {walnuts}, {dried_apricots}, {raisins}, and {honey} until glossy and well coated. Taste and brighten with a final pinch of {salt} if needed.
