Kyufte
Juicy grilled patties scented with cumin and savory, finished with a bright herb flourish.
Ingredients
- 250 g Ground Pork
- 250 g Ground Beef
- 1 pcs Onion
- 1 pcs Egg
- 1 tsp Summer Savory
- 1 tsp Cumin
- 0.5 tsp Black Pepper
- 1 tsp Kosher Salt
- 1 tbsp Sunflower Oil
- 2 tbsp Parsley
- 1 pcs Lemon
Method
- In a large bowl, grate {onion} finely, then add {ground_pork}, {ground_beef}, {egg}, {summer_savory}, {cumin}, {black_pepper}, and {kosher_salt}. Mix firmly until the meat turns sticky and cohesive so the {kyufte} hold their shape, then cover and chill.
- Let the kyufte mixture rest in the refrigerator so the salt seasons deeply and the proteins bind for a juicier, tighter patty.
- With damp hands, divide and shape the rested mixture into oval patties about the width of your palm, pressing lightly so they stay tender.
- Heat a grill pan or heavy skillet over medium-high heat until very hot. Brush with {sunflower_oil}, add the patties without crowding, and cook until deeply browned on both sides and the centers reach a safe temperature. Rest briefly so the juices settle.
- Transfer the hot patties to plates, scatter over {parsley}, and serve with a squeeze of {lemon} for a fresh finish against the rich meat.
