Manakeesh Zaatar
Warm flatbread with fragrant zaatar and olive oil, baked until golden and crisp at the edges.
Ingredients
- 300 g All Purpose Flour
- 1 tsp Kosher Salt
- 1 tsp Sugar
- 1 tsp Instant Yeast
- 180 ml Warm Water
- 4.666666666666667 tbsp Olive Oil
- 3 tbsp Zaatar
- 1 tbsp Sesame Seeds
Method
- In a large bowl, combine {all_purpose_flour}, {instant_yeast}, {sugar}, and {kosher_salt}. Pour in {warm_water} and {olive_oil}, then mix until a shaggy dough forms. Knead for several minutes until smooth and slightly tacky.
- Transfer the dough to a lightly oiled bowl, cover, and let it rise at room temperature until doubled and airy.
- Stir {zaatar} with {olive_oil} and {sesame_seeds} until it becomes a loose, spreadable paste.
- Set an oven tray inside the oven and heat to high. Divide the risen dough, then stretch each piece on a lightly floured surface into thin rounds with a slightly thicker rim.
- Spread the {zaatar} mixture over the dough, leaving the rim clear so the edges can puff and crisp.
- Slide the topped dough onto the hot tray and bake until the base is crisp, the edges are golden, and the {zaatar} smells deeply fragrant.
- Transfer the baked manakeesh to a board, drizzle with a little {olive_oil} if you like, and serve warm for the best texture.
