Ingredients

  • 2 pcs Green Pepper
  • 2 pcs Garlic
  • 0.5 tsp Aleppo Pepper
  • 1.25 tsp Kosher Salt
  • 0.25 tsp Black Pepper
  • 4 pcs Egg
  • 60 g Kasar Cheese
  • 2 tbsp Parsley
  • 0.5 pcs Lemon
  • 2 tbsp Olive Oil
  • 3 pcs Tomato

Method

  1. Finely dice {green_pepper} and {tomato}, and mince {garlic} so they cook quickly and melt into the sauce.
  2. Heat {olive_oil} in a medium skillet over medium heat. Add the prepared {green_pepper} with a pinch of {kosher_salt} and cook until softened and glossy. Stir in {garlic} and bloom {aleppo_pepper} briefly until fragrant, then add {tomato}, more {kosher_salt}, and {black_pepper}. Cook, stirring often, until the tomatoes break down and the mixture thickens into a jammy sauce.
  3. Crack {egg} into a bowl and whisk with a pinch of {kosher_salt} until the whites and yolks are fully blended.
  4. Lower the skillet to medium-low heat and pour in {egg}. Stir slowly with a spatula, scraping the pan so soft curds form while the tomato base stays saucy. When the eggs are barely set, fold in {kasar_cheese} so it melts without overcooking.
  5. Take the skillet off the heat while the eggs are still glossy. Scatter over {parsley}, add a light squeeze of {lemon}, taste, and adjust with {kosher_salt} before serving immediately.
