Mutton Bunny Chow
Fiery Durban curry packed into soft bread, with crisp sambal and sharp pickle on the side.
Ingredients
- 20 g Ginger
- 2 pcs Tomato
- 1 tbsp Tomato Paste
- 1 pcs White Bread Loaf
- 1 pcs Onion
- 4 pcs Garlic
- 2 pcs Green Chili
- 500 g Mutton Shoulder
- 2 tbsp Durban Curry Powder
- 1 tsp Ground Turmeric
- 1 tsp Ground Cumin
- 1 tsp Garam Masala
- 2 tbsp Canola Oil
- 400 ml Beef Stock
- 2 tsp Kosher Salt
- 1 tsp Black Pepper
- 1 pcs Carrot
- 1 pcs Lemon
- 2 tbsp Mango Pickle
- 2 tbsp Cilantro
- 1 tsp Ground Coriander
- 2 pcs Potato
- 1 pcs Red Onion
Method
- In a bowl, combine {carrot}, {red_onion}, a squeeze of {lemon}, and a pinch of {kosher_salt}. Toss until crisp and lightly wilted, then set aside for the flavors to meld.
- Pat {mutton_shoulder} dry, then heat {canola_oil} in a heavy pot over medium-high heat. Sear {mutton_shoulder} without crowding until deeply browned on the edges, seasoning with {kosher_salt} and {black_pepper} as it cooks so the curry starts with a strong savory base.
- Lower to medium heat, then add {onion}, {garlic}, {ginger}, and {green_chili} to the pot with the browned {mutton_shoulder}. Sweat until the {onion} is soft and sweet. Stir in {durban_curry_powder}, {ground_turmeric}, {ground_cumin}, {ground_coriander}, and {tomato_paste}, and cook until the spices smell toasted and the paste darkens slightly. Add {tomato} and another pinch of {kosher_salt}, then cook until jammy.
- Pour in {beef_stock}, add {potato}, and bring the pot to a gentle simmer over low heat. Cover loosely and cook until the {mutton_shoulder} is tender, the {potato} is soft, and the gravy is thick enough to cling to bread. Stir in {garam_masala}, taste, and adjust with {kosher_salt} and {black_pepper}.
- Cut {white_bread_loaf} into halves and hollow out the centers, leaving sturdy walls to hold the curry. Keep the soft bread pieces as the traditional lid for serving.
- Spoon the hot {mutton_shoulder} curry into the hollowed {white_bread_loaf} so the crumb starts soaking up the gravy without collapsing. Top with {cilantro} and finish with a little more {lemon} for brightness.
- Serve the filled {white_bread_loaf} immediately with the {carrot} sambal and {mango_pickle} alongside for crunch, heat, and sharp contrast.
