Pão de Queijo
Golden cheese puffs with a crisp shell and tender, chewy center.
Ingredients
- 120 ml Milk
- 40 g Parmesan Cheese
- 140 g Tapioca Flour
- 30 g Butter
- 0.5 tsp Kosher Salt
- 1 pcs Egg
- 60 g Mozzarella Cheese
Method
- Heat {milk}, {butter}, and {kosher_salt} in a small saucepan over medium heat for a few minutes until the {butter} melts and the mixture is steaming but not boiling, so the starch in {tapioca_flour} hydrates evenly.
- Pour the hot dairy mixture over {tapioca_flour} in a bowl and stir until shaggy, then cool briefly and beat in {egg}, {parmesan_cheese}, and {mozzarella_cheese} until a sticky dough forms and the cheese is evenly distributed.
- Portion the dough onto a lined tray and bake in a hot oven until the {pao_de_queijo} are puffed, lightly cracked, and deeply golden, then serve warm for the best chewy texture.
