Skyr með Berjum
Thick tangy skyr with sweet berries and a cool ribbon of cream.
Ingredients
- 350 g Skyr
- 80 ml Heavy Cream
- 2.3333333333333335 tbsp Sugar
- 125 g Blueberries
- 150 g Strawberries
Method
- Thinly slice {strawberries} so they spoon easily through the {skyr}.
- Whisk {heavy_cream} with {sugar} in a chilled bowl for about a minute until lightly thickened but still fluid, then fold in half the {skyr} for a softer texture.
- Gently fold the remaining {skyr}, the sliced {strawberries}, and {blueberries} into the sweetened cream, keeping some berry pieces whole for texture.
- Spoon the mixture into cold bowls and finish with a light dusting of the remaining {sugar} for a bright, delicate crunch.
