Spinach Bourekas
Flaky golden pastries with savory cheese and greens, warm from the oven.
Ingredients
- 250 g Puff Pastry
- 120 g Spinach
- 100 g Feta Cheese
- 80 g Ricotta Cheese
- 1 pcs Egg
- 1 pcs Onion
- 2 pcs Garlic
- 1 tbsp Olive Oil
- 0.75 tsp Kosher Salt
- 0.25 tsp Black Pepper
- 1 tbsp Sesame Seeds
- 0.5 pcs Lemon
Method
- Heat {olive_oil} in a large skillet over medium heat. Add {onion} with {kosher_salt} and sweat until soft and translucent. Add {garlic} and stir until fragrant, then add {spinach} and cook until wilted and any moisture has evaporated. Transfer to a bowl, let cool briefly, then mix in {feta_cheese}, {ricotta_cheese}, {black_pepper}, and a squeeze of {lemon} for brightness.
- Set the oven to high heat and line a baking tray. Cut {puff_pastry}, spoon the spinach filling onto each piece, fold into triangles, and press the edges firmly so the filling stays enclosed. Beat {egg} and brush the tops, then scatter {sesame_seeds} over each pastry.
- Bake the pastries in the hot oven until deeply golden, crisp, and puffed, rotating the tray halfway through for even color. Let them sit briefly so the filling settles, then serve warm.
