Suutei Tsai

Ingredients

  • 300 ml Water
  • 300 ml Whole Milk
  • 2 tsp Green Tea
  • 1 tbsp Unsalted Butter
  • 0.5 tsp Kosher Salt

Method

  1. Bring {water} to a boil in a small saucepan over medium-high heat. Add {green_tea} and {kosher_salt}, then simmer gently until the tea smells grassy and the color deepens.
  2. Lower to medium heat and pour in {whole_milk}. Heat gently, stirring often, until lightly steaming and unified; do not boil so the {whole_milk} stays sweet and smooth.
  3. Strain into warm cups, then stir in {unsalted_butter} until melted and glossy for a richer body and soft finish.
