Svíčková Na Smetaně

Ingredients

  • 4 pcs Thyme
  • 500 g Beef Sirloin
  • 60 g Bacon
  • 2 pcs Carrot
  • 1 pcs Parsley Root
  • 150 g Celeriac
  • 1 pcs Onion
  • 2 pcs Garlic
  • 2 pcs Bay Leaves
  • 6 pcs Allspice
  • 8 pcs Black Peppercorns
  • 2 tbsp Red Wine Vinegar
  • 500 ml Beef Stock
  • 150 ml Heavy Cream
  • 1 tbsp Butter
  • 2 tsp Sugar
  • 1 pcs Lemon
  • 2 tbsp Cranberry Compote
  • 300 g Bread Dumplings
  • 1 tbsp Lard
  • 2.75 tsp Salt

Method

  1. Finely dice {carrot}, {parsley_root}, {celeriac}, and {onion}, then mince {garlic}. Slice {lemon} for serving.
  2. Pat {beef_sirloin} dry, season with {salt}, then heat a Dutch oven over medium-high heat with {lard}. Sear {beef_sirloin} on all sides until deeply browned, adding {bacon} briefly to render and perfume the pot. Remove the meat so the crust stays intact.
  3. Lower to medium heat and add {onion} to the same pot with a pinch of {salt}. Sweat until soft and amber. Add {carrot}, {parsley_root}, {celeriac}, and {garlic}; cook until sweet and lightly caramelized. Add {bay_leaves}, {allspice}, {black_peppercorns}, and {thyme}, then bloom until fragrant. Stir in {red_wine_vinegar} and reduce until sharpness softens.
  4. Return {beef_sirloin} and {bacon} to the pot, add {beef_stock}, season lightly with {salt}, cover, and braise in a low oven until the meat is fork-tender and the vegetables collapse into the liquid.
  5. Lift out {beef_sirloin}, cover loosely, and rest until the juices settle so the slices stay moist.
  6. Discard {bay_leaves} and {thyme}, then blend the braising vegetables and liquid until completely smooth. Return to medium heat, add {heavy_cream} and {sugar}, and reduce gently until velvety. Brighten with {lemon} juice, whisk in {butter}, then taste and adjust with {salt} for a balanced sweet sour finish.
  7. Warm {bread_dumplings} gently until soft and steaming so they stay tender for serving.
  8. Slice {beef_sirloin} across the grain into thick pieces for a tender bite.
  9. Spoon {bread_dumplings} onto warm plates, nap with {finish_sauce} style sauce, add sliced {beef_sirloin}, then finish with {cranberry_compote} and {lemon} for the classic bright contrast.
