Syrniki
Golden cottage cheese pancakes with a tender center and a cool sour cream finish.
Ingredients
- 300 g Farmer Cheese
- 1 pcs Egg
- 2 tbsp Sugar
- 1 tsp Vanilla Extract
- 0.375 tsp Kosher Salt
- 90 g All Purpose Flour
- 1 tbsp Unsalted Butter
- 1 tbsp Vegetable Oil
- 120 g Sour Cream
- 1 pcs Lemon
- 3 tbsp Strawberry Jam
Method
- In a medium bowl, mash {farmer_cheese} until mostly smooth, then whisk in {egg}, {sugar}, {vanilla_extract}, and {kosher_salt}. Fold in most of the {all_purpose_flour} to make a soft dough that holds its shape; this keeps the centers tender instead of heavy.
- Dust a plate with some of the {all_purpose_flour}, divide the dough, and gently shape thick patties with lightly floured hands. Coat the outsides lightly so the crust browns evenly without absorbing excess fat.
- Heat a large nonstick skillet over medium heat with {vegetable_oil} and {unsalted_butter}. When the foam subsides, add the patties without crowding, lightly season with a tiny pinch more {kosher_salt}, and fry until deep golden on the first side, then turn and cook until the centers are set and the crust is crisp.
- Plate the hot syrniki and finish with cool {sour_cream}, a squeeze of {lemon}, and {strawberry_jam} on the side for brightness and contrast.
