Silky poached beef in fragrant broth with sharp apple horseradish and chive sauce.

Ingredients

  • 700 g Beef Top Round
  • 2 pcs Carrot
  • 200 g Celeriac
  • 2 pcs Parsley Root
  • 1 pcs Leek
  • 1 pcs Yellow Onion
  • 4 pcs Lovage
  • 2 pcs Bay Leaves
  • 1 tsp Black Peppercorns
  • 1 tbsp Kosher Salt
  • 1 pcs Apple
  • 40 g Horseradish
  • 1 pcs Lemon
  • 1 tsp Sugar
  • 2 pcs White Bread
  • 1 pcs Egg
  • 80 ml Sunflower Oil
  • 12 g Chives

Method

  1. Peel and cut {carrot}, {celeriac}, and {parsley_root} into large chunks, trim and wash {leek}, halve {yellow_onion}, and pick the leaves from {lovage}.
  2. Put {beef_top_round} in a large pot with {carrot}, {celeriac}, {parsley_root}, {leek}, {yellow_onion}, {lovage}, {bay_leaves}, {black_peppercorns}, and {kosher_salt}. Cover with water, bring to a bare tremble over low heat, skim well, then poach gently until the {beef_top_round} is tender and the broth is clear and aromatic.
  3. Peel and grate {apple}, then simmer it in a small saucepan with a ladle of broth from the pot and a pinch of {kosher_salt} over low heat until soft and lightly reduced.
  4. Fold freshly grated {horseradish} into the warm {apple} with a squeeze of {lemon}, a little {sugar}, and a spoonful of broth until sharp, balanced, and spoonable. Keep it cool so the {horseradish} stays lively.
  5. Cover {egg} with water in a small saucepan, bring to a gentle boil over medium heat, then cook until firm in the center. Cool under cold water and peel.
  6. Soak {white_bread} with a little warm broth, then blend with the yolk from the {egg}, {sunflower_oil}, a pinch of {kosher_salt}, a little {lemon}, and most of the {chives} until smooth and pourable. Taste and brighten with more {lemon} if needed.
  7. Lift out the {beef_top_round} and let it rest briefly, then slice it across the grain into neat pieces. Strain the broth and adjust with more {kosher_salt} until savory and clean.
  8. Warm the sliced {beef_top_round} briefly in the strained broth, then serve in warm bowls with the root vegetables, {apfelkren}-style apple horseradish, the chive sauce, and the remaining {chives} scattered over the top. Finish with a final squeeze of {lemon} for lift.
