Tostones con MayoKetchup

Ingredients

  • 2 pcs Green Plantain
  • 2 cups Vegetable Oil
  • 1 tsp Kosher Salt
  • 1 pcs Garlic
  • 3 tbsp Mayonnaise
  • 2 tbsp Ketchup
  • 1 pcs Lime

Method

  1. In a small bowl, stir {mayonnaise}, {ketchup}, {garlic}, a pinch of {kosher_salt}, and a squeeze of {lime} until smooth and lightly pink. Let it sit so the {garlic} mellows and perfumes the sauce.
  2. Peel {green_plantain} and slice into thick rounds so they fry evenly and stay creamy inside.
  3. Heat {vegetable_oil} in a deep skillet over medium heat to about 175C. Fry {green_plantain} in a single layer without crowding for a few minutes per side until pale gold and tender but not browned; transfer to a tray and sprinkle lightly with {kosher_salt}.
  4. While {green_plantain} are still warm, press each piece flat to make classic tostones. Keep the thickness even so the second fry turns the edges crisp before the centers dry out.
  5. Return {green_plantain} to the hot {vegetable_oil} over medium high heat and fry until deep golden with crisp ridges, flipping once. Drain well and season immediately with more {kosher_salt} so it clings to the hot surface.
  6. Serve {green_plantain} at once with the {mayonnaise} sauce and finish with another squeeze of {lime} for brightness against the rich fry.
