Tzatziki
Cool, garlicky yogurt with cucumber, dill, and a bright lemon finish.
Ingredients
- 1.5 cups Strained Yogurt
- 1 pcs Cucumber
- 2 pcs Garlic
- 4 tbsp Dill
- 0.5 pcs Lemon
- 1.8333333333333333 tbsp Extra Virgin Olive Oil
- 0.375 tsp Dried Oregano
- 1 tsp Kosher Salt
- 0.25 tsp Black Pepper
Method
- Coarsely grate {cucumber}, toss with {kosher_salt}, and let it sit in a colander until excess water drains and the flesh tastes lightly seasoned; squeeze very dry so the dip stays thick instead of turning loose.
- Finely chop {dill} and mince {garlic} so they disappear evenly into the dip and perfume every bite without harsh chunks.
- In a bowl, combine {strained_yogurt} with the drained {cucumber}, {garlic}, and {dill}. Add {extra_virgin_olive_oil}, {lemon}, {black_pepper}, the remaining {kosher_salt}, and {dried_oregano} if using, then stir until creamy and emulsified. Taste and adjust with more {lemon} or {kosher_salt} for a brighter, fuller finish.
- Let the {strained_yogurt} mixture chill so the garlic softens and the dill blooms, then spoon into a bowl and finish with a drizzle of {extra_virgin_olive_oil} and a final pinch of {dried_oregano}.
